cinnamon-vanilla protein pancakes

ingredients

  • 30 grams vanilla protein powder (i use whey, but i’m sure other types would work)
  • 2 tbsp ground flaxseeds
  • 1/2 cup egg whites (or four egg whites)
  • 1/2 tsp cinnamon
  • 2-4 tbsp water

directions

  1. in a bowl whisk together protein powder, flaxseed, cinnamon, egg whites.
  2. add in 2-4 tbsp water, enough to make the batter less dry.
  3. spray a pan with pam or rub with olive oil. heat stove to medium high.
  4. pour batter on to the pan with a measuring cup (i found 1/4 of cup works). they cook very quickly so flip as soon as bubbles start to form around the edges of the pancakes. flip and leave until other side is fully cooked (about 6 seconds.)
  5. enjoy pancakes and top with whatever you want :)

Philly cheese steak stuffed bell peppers!

2 medium bell peppers
1 package of beef stir fry steak strips
3 slices of provolone (or pepper jack, if you like it spicy)
1/2 onion
minced garlic (optional)

preheat oven to 350

leave your peppers in the oven while it’s preheating, until you need to pit them, it makes them more flavorful!

chop steak into smaller, bite size pieces
chop your onion half and ‘stir fry’ the steak and onion together
this is where the garlic comes in, you’ll need about 1 tsp - 1 tbsp - depending on how much flavor you want from the garlic ( I had to use garlic powder instead -BOO! hubbs threw my garlic out )
while the steak and onion are cooking, cut and pit the bell peppers
fold a slice of cheese in half and put each half in the bottom of one pepper
when the steak and onions are finished, pour them into the peppers
put a slice of cheese on top
roast for about 20 minutes or until cheese is melted to your liking

i was impatient and hungry, so I took mine out after about 12 minutes! lol
